Morning Splash Muffins

For anyone who knows me well, they know I love muffins. Used to be I could scarf down an entire Dunkin Donuts Coffee Cake Muffin in one bite. But that was when I was 10 and didn't think the sugary goodness was really affecting my skin for the worst. Eventually it caught up with me and I knew that I could no longer have a muffin a morning (don't get me wrong I still indulge in a pastry when need be, but I'm mindful about when). A few years ago I discovered an alternative to the delectable morning treat - and today I give you :
Splash Muffins
The muffins are quick, easy, and a delicious alternative to your favorite bakery style treat.
Here is my go-to recipe. Keep in mind - they are called 'Splash Muffins' because some ingredients are just splashed in!:
1 cup whole wheat flour
1 cup almond flour
1 tsp each baking soda and baking powder
splash of salt
splash of cinnamon
splash of chia seeds or hemp seeds
1 egg
1 tbs honey
1-2 tbs maple syrup or coconut sugar
splash (okay like 1/4 cup) of canola or grape seed oil
splash of unsweetened almond milk (or nut milk of your choice)
1 tsp vanilla extract
optional chopped fruit or berries mixed in
I like to sprinkle different seeds or nuts on top
Mix dry ingredients. Splash wet ingredients in. Pour out into greased muffin tin. Mixture will be thick. Pop it in the oven for about 10 minutes at 250 F. / 170 C.
And now you've got yourself a Splash Muffin. Enjoy!
